Cinnamon
Ok, this isn't a big surprise either. Cinnamon is already the hottest flavor in breakfast cereals: having grown 39% in the past for years to reach sales of $270 million in 2002. I am predicting that we'll see more of this spice in everything from coffee to desserts to even in main dishes. If you look at a line in front of Cinnabon, you can see that this flavor attracts a wide variety of demographics.
Obviously, I think one of the driving forces will be the growing influence of the Hispanic population. Having recently surpassed African Americans (12.7% of Americans) as the biggest minority group in the U.S., Latinos (13%) boast a collective disposable income of $450 billion a year. And cinnamon has been a used a lot in their diets. So expect to see it a whole lot more.
